I was browsing the Cooking Light boards, as I sometimes do, and out popped an old thread about this T&amp;amp;T tortilla soup recipe.  So many people raved about it, and it looked so easy to make; I had to try it! One of the highlights was always pancakes with blackberry sauce for breakfast.  Grandma would get me a little stool to stand on, and I would get to help make them.  She had (and still has) a huge blackberry bush in her backyard and she's always stocked with either fresh or frozen berries. I didn't have buttermilk on hand (normally don't), but I did have yogurt (always do), so I used half milk, half yogurt with a squeeze of lemon juice added, and it worked perfectly fine. Cook until the berries release their juices and start to break apart a bit, you can help them along by crushing them a bit with your spoon or spatula. Refrigerate for about 4-6 hours.  Prepare grill, and grill chicken thighs for about 15-20 minutes, until cooked through.  Sprinkle with sliced scallions.&lt;/div&gt;&lt;div&gt;I served it with coconut rice, cucumber salad and peanut sauce. I use jasmine rice, and cook it my rice cooker (zojirushi!  best appliance ever!).  The amount of liquid will depend on how much rice you're making, so I just use 1 can coconut milk, and then top the rest up with water.  To add a little extra flavour, saute 3 cloves garlic, 1 stalk lemongrass, and about 2 tsp minced ginger in a little bit of canola oil, just until it starts to turn a tiny bit golden.  Add to rice with 3 kaffir lime leaves (crinkle em up in your hands to help release the flavour) and cook according to your rice cooker. For the vinegar dressing, make a sugar syrup with about 2 - 2 1/2 parts sugar to 1 part water.  Let it cool, and then add white vinegar until it's tangy-sweet.  Not precise I know, but I just keep tasting and pouring until it's right. I stumbled upon their website quite some time ago, and have been hearing more and more about it.  It seemed like a really cute idea, kind of a flea market/craft sale type setup, but purely baked goods. A lot of them were good, but something I could easily make at home (banana bread, plain chocolate chip cookies etc.)  When we were about to leave, we came to the table of &lt;b&gt;Yummy Baked Goods&lt;/b&gt;.  Their giant s'more sandwich cookie caught my eye, and upon further investigation, there was a vast array of sinfully tempting sweets.  I sampled a ridiculously caramely blondie-type bar that was &lt;i&gt;so&lt;/i&gt; decadent and gooey (their caramel is &lt;i&gt;homemade&lt;/i&gt; to boot!).  I had to get one of those.  Then a cookies n cream sandwich cookie caught me eye.  One of those too, please.  &lt;/div&gt;&lt;div&gt;Paper bag in hand, I headed back to the car with the best of intentions of waiting until I got home.  Couldn't do it.  Took a giant bite of each...and oh my goodness. I bought a couple on a whim at Miette Patisserie in the ferry building marketplace and was delighted with their light crunch, and chewy centre.  A couple days later, I was at Bouchon Bakery in Napa Valley and picked up a few of theirs.  I've been looking for them since then in Vancouver and haven't really seen them anywhere.  Last week my mom surprised me with a couple from &lt;b&gt;Sweet Thea&lt;/b&gt; at the bakers market.  Wonderful!  So of course, I had to pick up a little box of these too.  Aren't they beautiful? Cover the bowl with plastic wrap and set aside at room temperature for about 2 hours, or until the dough is more than double in volume.&lt;/div&gt;&lt;div&gt;Put about a tablespoon of olive oil on each of 2 half sheet pans.  Scrape half of the dough onto one, and the other half onto the other pan.  Gently stretch the dough out to the edges with your hands (oiling your fingers makes it easier).  Top as you like! Toss in a bowl with 1/2 cup parmesan cheese, 2 small cloves of garlic, 1 tsp salt, 1/2 tsp chili flakes and 1/4 cup olive oil.  Spread this over crust and sprinkle&lt;/span&gt; &lt;span class="Apple-style-span" style="text-decoration: underline;text-decoration: none; "&gt;with 1/4 cup fresh bread crumbs. Place in a bowl and salt with 1 1/2 tsp table salt.  Mix and let sit for 15 minutes.  After it sits, squeeze liquid out of zucchini with a clean kitchen towel or cheesecloth.  Mix dry zucchini with 1 1/2 cups grated gruyere cheese, and black pepper to taste.  Spread over crust and sprinkle with 1/4 cup fresh breadcrumbs. Their recipe called for prepared black bean sauce, but I didn't have any so I used a recipe to make it from scratch; it was quite easy!&lt;br /&gt;&lt;/span&gt;&lt;/span&gt;&lt;div&gt;&lt;span class="Apple-style-span" style=""&gt;&lt;span class="Apple-style-span" style="-webkit-text-decorations-in-effect: none; "&gt;1 3/4 c fresh pineapple, cubed&lt;div&gt;1 large bell pepper&lt;/div&gt;&lt;div&gt;1/2 large onion&lt;/div&gt;&lt;div&gt;2 chicken breast halves, sliced&lt;/div&gt;&lt;div&gt;2 tbsp fermented black beans, rinsed&lt;/div&gt;&lt;div&gt;1 tsp minced ginger&lt;/div&gt;&lt;div&gt;2 tsp minced garlic&lt;/div&gt;&lt;div&gt;1 tbsp dry sherry&lt;/div&gt;&lt;div&gt;1 tbsp soy sauce&lt;/div&gt;&lt;div&gt;1 tbsp oyster sauce&lt;/div&gt;&lt;div&gt;1/2 tsp sugar&lt;/div&gt;&lt;div&gt;1/2 - 3/4 c chicken broth (depending on how saucey you want it)&lt;/div&gt;&lt;div&gt;chili garlic sauce or chili flakes to taste&lt;/div&gt;&lt;div&gt;2 tsp cornstarch dissolved in 1 tbsp water&lt;/div&gt;&lt;div&gt;2-3 sliced green onions&lt;/div&gt;&lt;div&gt;1/4 c cilantro leaves&lt;/div&gt;&lt;div&gt;Heat a frying pan over medium high heat, and add about 1 tbsp oil.  Fry chicken until almost cooked through.  Remove chicken from pan and set aside.  Pound rinsed black beans in a mortar and pestle with garlic and ginger. Fry for about a minute, and then push to the one side of the pan. I made these cranberry scones today, based on a King Arthur recipe.  The crunchy sugar on top is the best part!&lt;/div&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://2.bp.blogspot.com/_kk8v3kF_zG0/S-C1HoEdYCI/AAAAAAAAAZU/BIcC7aoWI8g/s1600/IMG_8539.JPG"&gt;&lt;img src="http://2.bp.blogspot.com/_kk8v3kF_zG0/S-C1HoEdYCI/AAAAAAAAAZU/BIcC7aoWI8g/s400/IMG_8539.JPG" border="0" alt="" id="BLOGGER_PHOTO_ID_5467569090247614498" style="display: block; margin-top: 0px; margin-right: auto; margin-bottom: 10px; margin-left: auto; text-align: center; cursor: pointer; width: 400px; height: 267px; " /&gt;&lt;/a&gt;&lt;div&gt;&lt;b&gt;Cranberry Orange Scones&lt;/b&gt;&lt;/div&gt;&lt;div&gt;2 c all purpose flour&lt;/div&gt;&lt;div&gt;1/2 tsp salt&lt;/div&gt;&lt;div&gt;1/4 c granulated sugar&lt;/div&gt;&lt;div&gt;6 tablespoons cold unsalted butter, cut into pieces&lt;/div&gt;&lt;div&gt;about 1 cup cranberries (I used frozen)&lt;/div&gt;&lt;div&gt;2 large eggs, beaten&lt;/div&gt;&lt;div&gt;1/4 c plain yogurt (I needed a little extra)&lt;/div&gt;&lt;div&gt;1 tsp vanilla extract&lt;/div&gt;&lt;div&gt;1/2 tsp almond extract&lt;/div&gt;&lt;div&gt;Zest of an orange (about 1 tbsp)&lt;/div&gt;&lt;div&gt;Coarse sugar, for sprinkling on top&lt;/div&gt;&lt;div&gt;Preheat the oven to 375 degrees and line a baking sheet with parchment paper.&lt;/div&gt;&lt;div&gt;Combine dry ingredients in a bowl and add cold butter.  Work the butter in with your fingers or a pastry blender until it is unevenly crumbly.  Mix in the cranberries.&lt;/div&gt;&lt;div&gt;Stir together the wet ingredients separately and add to the dry mixture.  Stir until just combined.  The dough should be quite moist, like cookie dough (mine was stiff, I think because of the frozen fruit).&lt;/div&gt;&lt;div&gt;Use a muffin scoop, or 1/4 cup measure to scoop the dough onto the prepared tray. She prepared her recipes for Everyday Roasted Duck, Rice &amp;amp; Lentils and Almond Cake Alla Mantovana for dessert. Then it's stuffed with rosemary sprigs, and a mixture of 1/2 c. lemon juice, 1 c white wine and 1/4 c olive oil (i used less) is poured on top. Tomato paste is added, followed by white wine and broth, and it simmers to allow the flavours to develop.  The lentils are then added, followed by the rice 15 minutes later. She butters the pan and then coats it with breadcrumbs which I haven't seen before.  It gave the outside a nice, crunchy crust that was very nice!  I served it with berries and slightly sweetened whipped cream with vanilla bean.  (On a side note, I baked my cake in a 10 inch springform pan instead of the 9 inch she called for.  I should've realized it would take less time since the cake was thinner! As a child, my family and I visited Thailand every January.  My grandpa started a tour company (long before I was born), and had fallen in love with Southeast Asia during his extensive travels.  By the time I showed up, I got to tag along on their annual "Amazing Thailand" trips.  Although I'm only 23 years old, I've been to Thailand somewhere between 10-15 times!  I have to say, I really miss it!&lt;div&gt;It did take me a while to appreciate the food though.  Truth be told, when I was a kid I was more likely to order chicken fingers and fries in the hotel lobby than anything authentic.  I love it now more than ever, now that my frequent visits are behind me!&lt;/div&gt;&lt;div&gt;Anyway, this is something my dad enjoyed in the coffee shop of the Montien Pattaya years ago.  A nice light, refreshing salad of ground chicken, lemongrass, lime, mint etc.  The interesting ingredient it has is raw jasmine rice that has been toasted and pounded to an almost-powder.  The rice adds little flecks of crunchiness that really add to the dish.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Larb Gai&lt;/b&gt;&lt;/div&gt;&lt;div&gt;575 g ground chicken meat&lt;/div&gt;&lt;div&gt;6 tbsp lime juice&lt;/div&gt;&lt;div&gt;2 tbsp fish sauce&lt;/div&gt;&lt;div&gt;Cook these ingredients together in a fry pan over high heat, until the chicken is cooked, and the pan dries up (moisture evaporates).  Remove from heat and add...&lt;/div&gt;&lt;div&gt;4 thinly sliced lemongrass stalks (white part only)&lt;/div&gt;&lt;div&gt;4-5 thinly sliced shallots&lt;/div&gt;&lt;div&gt;10 thinly sliced kaffir lime leaves&lt;/div&gt;&lt;div&gt;6-8 thinly sliced scallions&lt;/div&gt;&lt;div&gt;Thai bird's eye chilis (depending on your taste - I use 3-4)&lt;/div&gt;&lt;div&gt;2 tablespoons jasmine rice (toasted in a dry pan over med heat until golden, and then pounded in a mortar and pestle until it's almost a powder)&lt;/div&gt;&lt;div&gt;Mix everything together and serve over lettuce leaves. Love, love, love Easter.  The springtime flowers, chocolate eggs, and cute decorations all get me excited. But what &lt;i&gt;really&lt;/i&gt; gets me excited, is the &lt;i&gt;real &lt;/i&gt;reason we celebrate Easter. Any mention of making a batch sparks a ridiculous excitement in her.  I will admit, they &lt;i&gt;are&lt;/i&gt; good... which makes it even more difficult to save them for her.  See, at most times in my household, there are between 1-4 adult males wandering the kitchen, opening cupboards, and looking in the fridge for food.  Even if they're not particularly hungry, if it's food, and it's not nailed down, they will eat it.  Here's where the slightly threatening notes come in.  The only chance to possibly keep something from being eaten.  &lt;div&gt;Yesterday, I decided to whip up a batch of bagels for my lovely sister in law.  As I was making them, several people swarmed the kitchen, "Whatcha makin'?" "When are they ready?".  I explained they were for Laura, and put my brother (her husband) in charge of keeping them for her.  He must have learned something from my notes, because he made a nice own of his own! And the bagels &lt;i&gt;did &lt;/i&gt;make it to her in one piece!&lt;/div&gt;&lt;div&gt;The recipe I use is from the &lt;a href="http://www.kingarthurflour.com/recipes/bagels-recipe"&gt;&lt;span class="Apple-style-span"  style="color:#3333FF;"&gt;King Arthur Flour&lt;/span&gt;&lt;/a&gt; Baking Companion.   I usually egg wash them, and make a few different kinds - poppy, sesame, cheese etc.  For the cheese, I add it in the last 10 minutes of baking to prevent it from burning. I made the cake for their wedding last year, and I thought it would be a cute idea to recreate the top tier.  My brother is a huge carrot cake fan, so I used &lt;a href="http://www.kingarthurflour.com/recipes/king-arthurs-carrot-cake-recipe"&gt;&lt;span class="Apple-style-span"  style="color:#3366FF;"&gt;this&lt;/span&gt;&lt;/a&gt; recipe from King Arthur Flour (love them!).  If i had my way, I would have thrown raisins, walnuts, toasted coconut and maybe even pineapple in their, but he's a purist, so that was a no go.  The cake was &lt;i&gt;delicious &lt;/i&gt;though&lt;i&gt;, &lt;/i&gt;very moist too.  Their wedding cake was covered in fondant, which i fully intended to do this time, but it tore while i was trying to put it on.  Now, I'm not the most patient person, so straight into the trash it went. Any excuse to make special meals or snacks!  I usually don't do much, but this year my dad and brother's favourite team, the Colts, were in it.  Little did I know the tension of the game would cause them to lose their appetite...Darn!&lt;/div&gt;&lt;div&gt;&lt;div&gt;The rest of us sure enjoyed these though!  &lt;/div&gt;&lt;div&gt;I've never seen slider buns at any grocery store or bakery around here, so I decided to use this &lt;a href="http://www.kingarthurflour.com/recipes/soft-dinner-rolls-recipe"&gt;&lt;span class="Apple-style-span"  style="color:#3366FF;"&gt;King Arthur Flour recipe&lt;/span&gt;&lt;/a&gt; and just make them teeny.  Instead of dividing into 16 buns, I weighed each on my scale at about 1 oz (28g) each.  I think I ended up with 31 mini buns. When they were done proofing, i egg washed and topped with poppy or sesame seeds. I had read about it for ages, but never bothered to give it a try, figuring it would either be too much hassle or not worth the effort...WRONG.  It is every bit as wonderful as everyone says it is.&lt;/div&gt;&lt;div&gt;When I was in baking school we had deck ovens with a button that would flood the oven with intense steam and provide that shiny, crackly crust on our breads.  At home, I could never duplicate it.  I've tried brushing the dough with water and a pastry brush, or quickly spritzing it with a spray bottle in the oven...it never compared.&lt;/div&gt;&lt;div&gt;...Until a couple months ago when they printed a version of Jim Lahey's No Knead Bread in the Vancouver Sun.  I read it through, and went for it.  It was amazing...it couldn't have been any easier or tasted any better.  I had the giggles when I pulled it out of the oven and it made that crackly pop noise I hadn't heard since baking school.  &lt;/div&gt;&lt;div&gt;I received Jim Lahey's &lt;a href="http://www.amazon.ca/My-Bread-Jim-Lahey/dp/0393066304/ref=sr_1_1?ie=UTF8&amp;amp;s=books&amp;amp;qid=1264896613&amp;amp;sr=8-1"&gt;&lt;span class="Apple-style-span"  style="color:#3366FF;"&gt;new book&lt;/span&gt;&lt;/a&gt; for Christmas and made his Pane Intergrale (a partially whole wheat verison) yesterday.  It was gone instantly. I had some pork leftover, so I sliced it up into large, thin slices (try sticking it in the freezer for a while first; makes slicing thinly easier!) and marinated it the same way i did for the noodle dish (fish sauce, sugar, lemongrass, garlic).  I grilled it outside on the weber (in the rain nonetheless!), and then basically followed something similar to &lt;a href="http://www.foodandwine.com/recipes/grilled-chicken-banh-mi"&gt;&lt;span class="Apple-style-span"  style="color:#3366FF;"&gt;this recipe&lt;/span&gt;&lt;/a&gt; for the rest of the sandwich. To a Vietnamese, it's Bun Bo Xao.  At least that's what I gather from a google search, but I could be wrong...so that's why I'll be sticking with "No.29"!&lt;div&gt;Basically, it's a rice noodle salad with caramelized, lemongrass scented meat, crisp veggies, drizzled with nuoc cham... and it is ridiculously good.&lt;/div&gt;&lt;div&gt;Here's how I made it...no claims to authenticity, but it sure is tasty!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Thinly sliced pork or beef (I used pork this time), seasoned with fish sauce, lemongrass, garlic, and sugar (sorry no official amounts, but this time I used about 2 stalks lemongrass, 2 cloves garlic, 3 tbsp sugar, 4 tbsp fish sauce).&lt;/div&gt;&lt;div&gt;1 small onion, large dice&lt;/div&gt;&lt;div&gt;Carrots, cut into matchsticks&lt;/div&gt;&lt;div&gt;Cucumber, cut into matchsticks&lt;/div&gt;&lt;div&gt;Bean sprouts&lt;/div&gt;&lt;div&gt;Lettuce, shredded&lt;/div&gt;&lt;div&gt;Cilantro&lt;/div&gt;&lt;div&gt;Chopped Peanuts&lt;/div&gt;&lt;div&gt;Thin rice noodles, cooked according to package and rinsed&lt;/div&gt;&lt;div&gt;Nuoc Cham: I used the recipe found &lt;a href="http://allrecipes.com/Recipe/Nuoc-Cham-Sauce/Detail.aspx"&gt;here&lt;/a&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Fry beef and onion with a little canola oil until cooked and sugar starts to caramelize.  Place rice noodles in bowls, and arrange veggies and meet on top.  Drizzle with nuoc cham and top with peanuts.
